Siddharth Chakraborty is a chef, entrepreneur, and founder of Vintage Foods in Udaipur.
Siddharth was born and brought up in Udaipur; he did his schooling in Udaipur and then did his higher education in hotel management at IIHM, Aurangabad.
Siddharth shares that he owns ‘Vintage Foods, which further consists of four brands: Vanjaara, an Indian brand that serves special dishes from 29 states and modern Indian food; Rustic, which serves Italian, American, and other European countries' flavors; and Vichitra Vyanjan, which serves modern fusion cuisine. The fourth brand is 144, which serves food for Rs. 144.
Siddharth’s role model is his first executive chef, with whom he started his career at the Taj Lake Palace, Chef Jitendra Kumar. He is a very prominent chef who has worked a lot at the global level. Siddharth admires him a lot and also looks up to him always. He also considers Marco Pierre White (MPW) his role model, and he is a legend.
Sharing his COVID experiences, Siddharth considers the pandemic situation a cluster of positive opportunities for those who took it. With prior permission from the Government of Maharashtra, his venture in Mumbai delivered essential food and food items during the lockdown. Though he faced a 50% hit from March to June 2020, there was no salary cut for his employees.
Advising aspirants in his field, Siddharth’s advice for being a professional chef is to have a proper educational background. At least one should have a basic education and then pursue this career by getting a diploma or degree in this sector. For entry-level positions, skills and basic education are a must. Also, experience plays an important role; books are mandatory, but experience is required for our own reference.
Comparing education and experience, Siddharth says that he has seen a complete transformation in this sector from his time to today. At his time, education was low, but skill and experience levels were unbeatable amongst the chefs. But today, as the world gets more competitive, education, along with skills and experience, is required for reaching heights.
In his free time, Siddharth likes to spend time alone and peacefully. Or maybe he will go for a long drive in search of serenity and peace. Also, he loves reading and playing virtual games.
According to Siddharth, there is a difference between a boss and a leader. A leader is the biggest team player that others always look up to. He tries not to be a boss, but a leader. He is grooming his leadership skills to enhance them in a better way. Also, he is always ready to take charge of the kitchen at his hotel whenever required and is always ready to lend a helping or guiding hand to his employees.
Siddharth’s favorite song is "Kabira" from the movie Yeh Jawani hai Diwani. He very much relates his passion for traveling and learning to this song.
Siddharth follows one famous quote from the movie ‘Rocky, which says, "Life is not about how hard of a hit you can give; it’s about how many you can take and still keep moving forward." This quote inspires him to be right on track and to keep moving through all the ups and downs.
