Pushkar is a restaurant owner who started his own restaurant at the age of eighteen with his brothers. He was fully supported by his family and treats his staff as his family members and not just workers.

Pushkar Sahu is the owner of Bawarchi Restaurant, Udaipur. He has been running this business for the past thirty years.

Pushkar was born and brought up in Udaipur. He did his schooling at Navodaya Vidyalaya and after completing his schooling, he came into the business field.

Pushkar shares that initially he had no intention of coming into this field. However, once he and his brothers visited Mumbai and saw the fast-food culture there. Inspired by it, they started Udaipur’s first fast-food outlet and laid the foundation of Bawarchi Restaurant.

Pushkar says that initially getting raw materials for a fast food joint was a very tough task at that point in time. Also, he feels that working in a restaurant business requires maintaining good quality and service all the time. He also feels that the staff should be treated like family and not just as workers. Pushkar is proud of the fact that the same staff who joined him several years back is still working with him.

Talking about his struggles, Pushkar says that the years between 1993 to 2004 were particularly hard for him.

When asked about his role models, Pushkar says that his parents have always supported him and hence they are his role models.

Pushkar opines that when it comes to choosing between education and experience, he thinks that both are important. However, he adds that if after getting an education one fails to gain experience then one will not be able to succeed in life.

Sharing his COVID-19 experience, Pushkar says that during the first lockdown, he made proper arrangements for his staff to return to their homes and supported them even if that meant paying from his own pocket. He also feels that after the second wave of the pandemic business has boomed and progress is very good.

Advising the ones aspiring to open their restaurants, Pushkar says that they should first work at a restaurant for two to three years to gain proper experience in every work. They should not hurry and work responsibly.

Pushkar informs that he keeps updating his business according to changing times. Also, the next generation of the family is also coming into this field, bringing with them fresh ideas and the use of technology.

In his free time, Pushkar likes watching movies and spending time with his family.
