His experience as a chef in five-star hotels inspired him to introduce fast food in a healthy and artisanal way, standing apart from other options available in Kota.

At Pizza Trevia, everything is homemade, including the cheese, pizza sauce, pizza dough, and the sandwiches. Manish Yadav brings his expertise as a head baker in five-star hotels to ensure each item is made with precision and quality, providing a wholesome experience for his customers.

His career in the food industry began in 2007, when he pursued a degree in Hotel Management from IHM Hyderabad. After graduating, he gained extensive experience working in prestigious five-star hotels across India and abroad. In India, he worked at Ritz Carlton, Pune, and the Hyatt group, Pune, as well as the Four Seasons, Mumbai. Abroad, he worked at Four Seasons, Seychelles. During the COVID-19 pandemic, he returned to India and took the bold step of starting his own business, realizing his long-held dream of running a venture of his own.

From the very beginning, Manish Yadav had a desire to create something of his own. He believes that in any job, learning continuously is essential because each experience contributes to better understanding, analysis, and decision-making when starting one’s own enterprise. His love for food has been lifelong—since childhood, he had been fascinated by how food is made, how flavors are developed, and how excellent service is delivered. This passion naturally evolved into a profession.

Manish Yadav is a native of Kota, where he continues to reside. He completed his schooling from a school in Talwandi, studying there from the beginning to the end. Following this, he graduated from IHM Hyderabad with a three-year Hotel Management Degree.

Manish Yadav draws inspiration from historical and contemporary figures. He admires Sardar Vallabhbhai Patel, particularly for his role in uniting India after independence—a feat Manish considers monumental. He is also inspired by Chef Sanjeev Kapoor, whose shows he followed closely in his youth, motivating him to pursue a career in culinary arts.

A quote that deeply motivates him is: “Dreams don’t work unless you do, every single day.”

Whenever he feels low, he recalls this quote, which encourages him to keep working towards his goals with dedication.

When he came back to India during the COVID-19 pandemic, Manish Yadav decided to start his own venture. While conceptualizing Pizza Trevia was relatively straightforward, implementing the idea was challenging. Transitioning from an employee to a business owner required learning multiple aspects of running a business, making mistakes, analyzing them, and gradually improving operations. Over the past 3–4 years, through persistent effort, he has grown his brand, optimized processes, and now believes he is operating in the right location with the right concept, while continually learning from customer feedback and refining his offerings.
