Keep cool and be patient till the rough seas end and the calm seas start.
Karan Vijay Singh Bedla is a restaurateur by profession and the owner of Royal Repast-From the House of Bedla, Udaipur. The main focus of his restaurant is to reconcile the history of the Bedla family, the Mewar region and the cuisine associated with it. He has been in the food industry for five years now.
Born and brought up in Udaipur, Karan did his primary schooling from Udaipur and went to pursue his further studies at Mayo College, Ajmer. Thereafter, he did his Bachelors at Rajasthan University and joined the Suja hotel group heading their food and beverage services at Jaisalmer, Ranthambore and Delhi. After that, he came back to Udaipur and started his own venture Royal Repast. He says initially it did not take off really well, however, gradually he learnt from his own mistakes and changed his thoughts and concepts according to the need of the time.
Karan shares that the idea of coming into the food industry originated in his 2nd standard when he used to witness his parents celebrating food festivals across the country with the Taj Group of Hotels. This was the first time he ever saw a commercial kitchen at Taj Palace, Delhi and got fascinated by things happening in the kitchen which drove him towards this industry.
He advises aspiring restaurateurs to follow what they have in their minds and practice constant change to make customers experience something new every time. Karan also urges the youth to be themselves and take responsibility for their businesses. He thinks that to work in any industry and be successful, one has to have it in them. He substantiates it by saying that cooking has been his hobby that he turned into a full-time profession.
Karan’s role models are his parents and he drew the inspiration of getting into the food industry from them only. He shares that his parents have always been open to his ideas and supported him in every way. Karan shares a piece of advice given by his father which goes like “Give your business at least a thousand days to settle down and then you will easily sail through.”
Karan feels that his personal relations with his guests play a crucial role in his business. He shares one of his biggest achievements was when he received his very first guest and their response on tasting the food turned out to be priceless.
Discussing COVID, Karan shares that the pandemic taught us to manage things in a very minimalist way and also gave us some family time. If Karan could go back in a time machine, he would revisit his Mayo days when he used to have fun with his friends and play sports.
In his free time, he likes to spend time with his family and go camping. His success mantra is to follow one’s heart and feel the satisfaction of doing what one has always wanted to do in life.
